Farmer's Markets
Today
I skipped my usual Saturday morning routine at the gym to check out a
couple of the local farmer’s markets. My neighbor went with me.
First we traveled to the St.
Stephen’s market at the corner of Grove and Three Chopt in the
parking lot at St. Stephen's church (Richmond, VA). It was pretty nice!
Several tents with some good looking produce, as well as vendors selling
jewelry, clothes, sticky buns, granola and fresh pasta!
At one of the larger produce stands, the farmer offered us samples of
his cantaloupe. Deliciously warm from the sun. Of course, I had to buy
one. He said he had grown everything he was selling. I also bought a huge
and beautiful bunch of Swiss Chard for just $3.50. I’m telling you,
it was 3 times larger than what you find at the grocery store. (See recipe
below.) And he grew it himself! He was selling all kinds of peppers,
some really cute eggplants and heirloom tomatoes as well.

Curry Lentils with Greens
Curry
Lentils with Greens made good use of the Swiss chard I bought at the Farmer's
market Saturday.
1 cup lentils
4 or 5 large fronds Swiss chard, cut into one inch strips
1 carrot, peeled and chopped
½ large onion, chopped
3 cloves garlic, diced
2 cups low-sodium vegetable broth
About 4 tbsp. olive oil
1 tsp. hot curry powder
1 tsp. curry powder
1 tsp. coriander
1 tsp. cumin
½ tsp. turmeric
½ tsp. paprika
¼ tsp. pepper
Dash of cayenne pepper
1) In medium kettle, heat a couple of tablespoons of olive oil on medium-high
heat. Add onions and sauté a few minutes.
2) Add carrot and garlic and sauté a couple of minutes. Add more
olive oil, as needed.
3) Add all spices and stir them together with onions, carrot and garlic.
4) Add vegetable broth and lentils and bring to a boil. Reduce heat to
simmer.
5) Stir in Swiss chard and cover pot. Simmer for about 20 minutes until
lentils are firm but tender.
6) Serve with rice, quinoa, couscous or naan.
Makes 4 side servings or two main dish servings.
