Humane Society TAFA Weekend (July 23-25)

Brenda Morris, Wayne Pacelle, Kim Williams (me!) at the 2010 TAFA ConferenceThis weekend I was fortunate enough to be at the Humane Society's Taking Action for Animals (TAFA) Conference in Washington, D.C. In addition to meeting so many kind-hearted people, I learned about action that can be taken politically to help animals. And...all of the food at the conference was Vegan!

The highlight was Saturday night's banquet. While dining on a Vegan feast, we listened to Representative Nick Rahall (D, West Virginia). He is a true friend and advocate for animals on Capital Hill. He showed up with his wife and with his adorable rescued pooch. Next, Humane Society President & CEO Wayne Pacelle gave a truly inspiring speech encouraging all of us to continue working to help animals. Finally, comedian Hal Sparks had all of us laughing uncontrollably as he reminded us to lighten up and be more like our pets (i.e., happy).

Exhibition Hall

 

Michael Giacomello, a Vegan chef at the conference told me about a vegan meat substitute product that I was unfamiliar with - Meatmatch. This was served Saturday night and was delicious. Check out the website: http://www.matchmeats.com/.

He also provided me with the banquet menu from Saturday night:

Assorted breads and rolls

Boston Bibb Lettuce Salad with candied walnuts, sun-dried cranberries and yellow peppers with champagne vinaigrette

Spinach and Cheese Stuffed and Breaded Chicken Breast
Wild Mushroom Risotto
Seasonal Vegetables
Mushroom Gravy

Chocolate Mousse with chocolate cake pieces, chocolate tuile, whipped cream and a raspberry.

It was delicious!

I looked on the Match Meats website for the recipe most resembling our main course Saturday night. I am posting it at the bottom of this page.

Spinach Stuffed Match meat Chicken

1 lb. Chicken Match
2 T. Olive Oil
1/2 Yellow Onion, Diced
1T. Chopped Garlic
4 oz. Vegan Cream Cheese
8 oz. Frozen Spinach, well drained
1 tsp. Black Pepper
1 tsp. Salt
1 T. Lemon Juice

Yield: 5

Match Mock Chicken1) In skillet on medium heat, saute onion and garlic in 1 tablespoon of the olive oil. Add spinach (make sure spinach has been squeezed well, removing liquid). Add vegan cream cheese, salt and pepper and lemon juice. Set aside.

2) Divide Match Chicken into 5 equal portions. Flatten slightly. Spread 1/5 of the spinach mixture on each portion. Fold over and shape to resemble a stuffed chicken breast. These can be frozen for later use.

3) On medium heat in the remaining 1 tablespoon of olive oil. Lightly sear the Match Chicken Breasts. Finish off in a preheated 350 degree oven for 15 minutes. Serve with your favorite rice or Cous Cous dish.
